  • 1 Chicken Breast (400g)
  • 1 Sandwich Bread
  • 1 Tablespoon Onion Juice
  • 3 Tablespoons Olive Oil
  • 1 Teaspoon Tomato Paste
  • 2 Teaspoons Lemon Juice
  • 1 Teaspoon Paprika
  • 1 Teaspoon Black Pepper
  • ½ Teaspoon Chili Flakes (adjust to taste)
  • 2 Teaspoons Oregano or Thyme
  • 1 Teaspoon Salt
  • 1 Tablespoon Yogurt or Milk

Instructions to Make the Perfect Chicken Sandwich

1. Marinate the Chicken

To achieve maximum flavor, we’ll start by marinating the chicken.

  • Extract juice from 1 medium onion (about 1 tablespoon).
  • Add 3 tablespoons of olive oil, 1 teaspoon of tomato paste, 2 teaspoons of lemon juice, 1 teaspoon of paprika, 1 teaspoon of black pepper, and ½ teaspoon of chili flakes (adjust to taste if you prefer a spicier sandwich, you can add 1-2 teaspoons).
  • Add 2 teaspoons of oregano or thyme, 1 teaspoon of salt, and 1 tablespoon of yogurt (or yogurt drink or milk, whichever is available).
  • Whisk all ingredients together to form a marinade.

2. Prepare the Chicken

  • Slice your chicken breast into thin pieces. If slicing thin is difficult, you can either cut the chicken into julienne strips or freeze the chicken for about an hour to make slicing easier.
  • Once the chicken is sliced, add it to the marinade. Refrigerate for at least 3 hours (overnight is even better for best results).

3. Cook the Chicken

  • Heat 3 tablespoons of olive oil in a pan.
  • Add the marinated chicken and cook until golden brown on both sides.

4. Assemble the Sandwich

  • Prepare a garnish of tomato, onion, and sumac powder.
  • Add the garnish to your sandwich bread, followed by the cooked chicken.
