INGREDIENTS

  • 1 medium onion, diced
  • 1 large bell pepper, diced
  • 1 chicken breast (400 gr.)
  • 4 tablespoons oil (sunflower or palm oil recommended)
  • 3 cloves garlic, chopped
  • 1 tablespoon flour
  • 1 ½ tablespoons curry powder
  • 350 ml milk
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon chili powder (optional, for added spice)

Instructions

1. Prepare the Ingredients

  1. Chop Vegetables: Dice one medium onion and one large bell pepper.
  2. Slice the Chicken: Take half of a chicken breast, cut it into two large sheets, then slice each sheet into thin strips. Finally, chop the strips into smaller bite-sized pieces.

2. Stir-Fry the Vegetables and Chicken

  1. In a large pan, heat 4 tablespoons of oil over medium heat.
  2. Add the diced onion and bell pepper to the pan. Stir-fry for about 10 minutes until the vegetables soften and become fragrant.
  3. Add the chopped garlic and stir for another minute.
  4. Add the sliced chicken and cook, stirring frequently, until it’s browned and cooked through. Set the cooked chicken and vegetables aside.

3. Prepare the Curry Sauce

  1. In the same pan, add another 4 tablespoons of oil over medium heat.
  2. Sprinkle in 1 tablespoon of flour and stir for approximately 3 minutes, letting it cook slightly.
  3. Add 1 ½ tablespoons of curry powder and stir for 2 minutes to release the spice’s flavors.
  4. Gradually pour in 350 ml of milk, stirring continuously to avoid lumps.
  5. Add the spices:
    • ½ teaspoon black pepper
    • 1 teaspoon paprika
    • 1 teaspoon salt
    • 1 teaspoon chili powder (if you prefer a spicy kick)
  6. Stir the sauce until it thickens and coats the back of a spoon.

4. Combine and Finish Cooking

  1. Season the cooked chicken and vegetables with an additional teaspoon of salt, then mix well.
  2. Pour the curry sauce over the chicken and vegetables, stirring to combine.
  3. Let the curry simmer for about 7 minutes, allowing the flavors to meld.
